The cuisine of Ecuador is represented by a broad spectrum of national dishes. Food in Ecuador includes the elements of Western cuisine, or even Asian food. Preferably the national dishes consist of rice, potatoes and meat - known locally as "churrasco". Pork is eaten very seldom; the locals prefer beef or chicken. Although the choice of vegetarian foods available in Ecuador is superb. The country has rich selection of fruits and vegetables. Visiting Ecuador the tourists should try some traditional dishes, such as Fritada (roast pork, corn, cheese, avocado, potatoes and plantains), Locro (a combined cheese, avocado and potatoes soup), Humitas (cornmeal tamales), Llapingachos (pancakes stuffed with mashed potato and cheese) and others. The Ecuadorians are fond of Aji. It is the hot sauce that accompanies most national foods. National drinks include Canelazo (made from sugar cane, alcohol, lemon, sugar and cinnamon), Pisco (local brandy) and Chicha (fermented corn drink).
